  • 20 cherry tomatoes, washed and patted dry
  • 20 mini mozzarella balls (bocconcini), drained
  • 20 fresh basil leaves, washed and dried
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon aged balsamic vinegar (optional)
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • About 20 wooden toothpicks or mini skewers

Instructions

  1. Rinse and dry the cherry tomatoes and basil leaves gently with paper towels. Drain the mozzarella balls well to avoid sogginess.
  2. In a small bowl, combine the mozzarella balls and fresh basil leaves. Drizzle with 1 tablespoon of extra-virgin olive oil and sprinkle lightly with salt and pepper. Toss gently to coat without bruising the leaves.
  3. Take a wooden toothpick or mini skewer and thread one cherry tomato first, followed by a basil leaf folded in half, then a mozzarella ball. Repeat until all ingredients are used.
  4. Arrange the skewers on a serving plate or pack them straight into the lunchbox. Drizzle the remaining olive oil and aged balsamic vinegar over the top for flavor and shine.
  5. Add a tiny sprinkle of salt and freshly ground pepper on top to taste.

Notes

If assembling ahead of time, keep skewers covered in the fridge and add balsamic drizzle just before serving to prevent sogginess. Thread basil leaves folded in half to make biting easier and prevent tearing. Use bamboo skewers with a flat edge to avoid slipping. Handle basil gently to avoid bruising.
