  • 1 pound ground turkey (93% lean)
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 2 cups cooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups romaine lettuce, shredded
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • Juice of 1 lime (about 2 tablespoons)
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder

Instructions

  1. Cook the rice first according to package directions. If using a pot, bring 1 1/2 cups water to a boil, add 1 cup rice, reduce heat to low, cover, and simmer for 15-18 minutes. Fluff with a fork when done.
  2. While the rice is cooking, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the ground turkey, breaking it apart with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through with no pink remaining.
  4. Reduce heat to medium. Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to coat the meat evenly. Pour in chicken broth and let simmer for 2-3 minutes, scraping up browned bits from the pan. Taste and adjust seasoning if needed.
  5. While the turkey simmers, drain and rinse the black beans, thaw the corn, dice the avocado, halve the cherry tomatoes, shred the lettuce, and chop the cilantro. Set everything aside in separate bowls.
  6. In a small bowl, whisk together sour cream, lime juice, salt, and garlic powder until smooth. Adjust lime or salt to taste.
  7. Divide the cooked rice evenly among four meal prep containers. Top each with a quarter of the seasoned turkey, black beans, and corn. Add shredded lettuce, cherry tomatoes, and diced avocado on top or in separate compartments if your containers allow. Drizzle with lime crema and garnish with fresh cilantro.
  8. Seal the containers and refrigerate for up to 4 days. For best results, keep the avocado and crema separate and add them fresh when ready to eat.

Notes

For best texture, use 93% lean ground turkey. Thaw frozen corn completely and pat dry to avoid watery bowls. Don’t skip the lime crema—it makes the dish. When reheating, remove lettuce, avocado, and crema first; microwave the base for 1-2 minutes, then add cold toppings back. The flavors improve after a day in the fridge.
