A simple, cozy side dish featuring tender delicata squash rings roasted with a sweet maple glaze. This recipe requires no peeling and comes together in under 45 minutes for a stress-free, flavorful meal.

  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1 teaspoon chopped sage or rosemary (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly. Cut off the stem and bottom end, then slice into 1/2-inch thick rings. Scoop out the seeds from the center of each ring.
  3. In a large bowl, whisk together olive oil, maple syrup, salt, pepper, and cinnamon until well combined.
  4. Add the squash rings to the bowl and toss gently with tongs until evenly coated in the glaze.
  5. Line a large baking sheet with parchment paper or a silicone mat. Arrange the squash rings in a single layer, ensuring they are not touching.
  6. Roast in the preheated oven for 20 minutes.
  7. Remove the baking sheet and flip each squash ring over.
  8. Return to the oven and roast for another 15-20 minutes, or until the squash is tender when pierced with a fork and the edges are golden brown and caramelized.
  9. Let the squash cool for 5 minutes on the pan to allow the glaze to set. Serve warm, drizzling with any remaining glaze or garnishing with fresh herbs.

Notes

Do not crowd the pan; squash pieces should not touch to ensure proper roasting and caramelization rather than steaming. Watch closely in the last few minutes as maple syrup can burn quickly. If using nuts, add them in the last 5 minutes of roasting to prevent burning. The skin of the delicata squash is edible and does not need to be peeled.
