  • 1 lb ground beef (80/20)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup beef broth
  • 1 lb Velveeta, cubed
  • 1 can (10 oz) Rotel tomatoes with green chilies, undrained
  • ½ cup whole milk
  • ¼ teaspoon cumin
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 1 cup shredded Mexican blend cheese
  • 1 cup sour cream
  • 1 cup pico de gallo or fresh salsa
  • 1 cup guacamole
  • ½ cup pickled jalapeños, drained
  • ½ cup black olives, sliced
  • ½ cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 375°F (190°C). Prep toppings: dice onion, mince garlic, slice green onions, chop cilantro.
  2. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for about 3 minutes until soft. Add ground beef, breaking it up, and cook until browned (5-6 minutes). Drain excess fat if needed.
  3. Reduce heat to medium. Add minced garlic, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 1 minute until fragrant. Pour in beef broth and simmer for 2-3 minutes until liquid is mostly absorbed. Adjust salt to taste.
  4. In a medium saucepan, combine cubed Velveeta, undrained Rotel, milk, and cumin. Warm over medium-low heat, stirring frequently, until completely smooth (8-10 minutes). Keep warm on lowest heat.
  5. Spread tortilla chips in an even layer on a rimmed baking sheet. Spoon seasoned ground beef evenly over chips. Sprinkle shredded Mexican blend cheese over everything.
  6. Bake for 8-10 minutes until cheese is melted and chips are lightly golden.
  7. Remove from oven and immediately drizzle warm queso over the top. Arrange sour cream, pico de gallo, guacamole, pickled jalapeños, black olives, cilantro, and green onions in small bowls around the sheet pan. Tuck lime wedges in between.
  8. Serve immediately with small plates, letting everyone build their own nachos.

Notes

Don’t over-season the beef; the queso balances the heat. Keep queso warm in a small slow cooker or reheat gently with milk. Watch the chip-to-topping ratio—use about two-thirds of the bag for the base. Layer strategically: spread beef evenly, add shredded cheese before queso for structure. Prep all toppings before baking. Leftovers: store beef and queso separately; chips don’t reheat well.
