  • 1 teaspoon olive oil (extra virgin)
  • Salt and freshly ground black pepper to taste
  • 1 cup baby carrots, peeled
  • 1 red bell pepper, sliced into strips
  • 1 zucchini, cut into half-moons
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together 3 tablespoons honey, minced garlic, 2 tablespoons soy sauce, 1 tablespoon lemon juice, and 1 teaspoon olive oil. Set aside.
  3. Toss baby carrots, bell pepper strips, zucchini half-moons, and broccoli florets with 1 tablespoon olive oil, smoked paprika (if using), salt, and pepper. Spread evenly over a rimmed baking sheet lined with parchment paper.
  4. Roast the veggies in the oven for about 15 minutes.
  5. While the veggies roast, pat the salmon fillets dry with paper towels and season lightly with salt and pepper.
  6. Remove the baking sheet from the oven after 15 minutes. Push the veggies to the sides to make room in the center and place the salmon fillets skin-side down in the cleared space.
  7. Brush the salmon generously with the honey garlic glaze.
  8. Return the sheet pan to the oven and roast for another 12-15 minutes until the salmon is opaque and flakes easily with a fork, and the glaze is bubbling and slightly caramelized.
  9. If salmon is thick, roast an additional 2-3 minutes as needed. Ensure veggies are tender and golden but not mushy.
  10. Serve immediately, spooning any pan juices over the salmon and veggies.
