Easy Homemade Chili Flake Hot Honey

A quick and easy spicy-sweet hot honey recipe perfect for drizzling over meals or gifting. Balances gentle heat with rich honey sweetness using simple pantry ingredients.

  • 1 cup (240 ml) honey (mild-flavored like clover or wildflower recommended)
  • 2 tablespoons red chili flakes (medium heat; up to 3 tablespoons for hotter)
  • 1 teaspoon apple cider vinegar
  • Pinch of salt
  • Optional: 1/2 teaspoon smoked paprika

Instructions

  1. Measure your honey and chili flakes. Pour 1 cup (240 ml) of honey into your saucepan. Add 2 tablespoons of red chili flakes. If using smoked paprika and salt, add them now.
  2. Warm gently over low heat. Place the pan on the stove and warm the mixture on low for about 10 minutes. Stir occasionally with a wooden spoon to prevent sticking and distribute the chili flakes evenly.
  3. Add apple cider vinegar. Stir in 1 teaspoon of apple cider vinegar and mix well.
  4. Remove from heat and let infuse. Take the pan off the stove and allow the chili flakes to steep in the warm honey for at least 30 minutes, or longer if you want more heat.
  5. Strain (optional). If you prefer a smooth honey without chili flakes in your jar, strain the mixture through a fine mesh sieve into a clean, heatproof jar. Otherwise, leave the flakes in for a rustic look and extra kick.
  6. Cool and store. Let the hot honey cool to room temperature, then seal with a lid. Store in a cool, dry place for up to 3 months.

Notes

Keep heat low to avoid scorching honey. Let chili flakes infuse for at least 30 minutes for best flavor; longer infusion deepens taste. Warm gently if honey crystallizes. Vinegar brightens flavor and balances sweetness. Optional to strain out chili flakes for smooth honey or leave in for texture and appearance.
