A quick, budget-friendly, and flavor-packed breakfast burrito filling made with simple pantry staples like black beans and eggs, perfect for busy mornings.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 4 large eggs, lightly beaten
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • Optional: 2 tablespoons fresh cilantro, chopped
  • Optional: ¼ cup shredded cheddar cheese or your favorite cheese
  • Flour or corn tortillas, for wrapping

Instructions

  1. Heat the olive oil in your skillet over medium heat (about 3-4 minutes) until shimmering but not smoking.
  2. Add the chopped onion and sauté until soft and translucent, roughly 5 minutes.
  3. Stir in the minced garlic and cook for another 30 seconds to 1 minute until fragrant.
  4. Add the drained black beans to the pan, stirring to combine. Let them warm through for about 2 minutes.
  5. Sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Stir well and cook for 1-2 minutes to toast the spices slightly.
  6. Pour the beaten eggs evenly over the bean mixture. Let it sit undisturbed for about 30 seconds, then gently start stirring to scramble the eggs, mixing them with the beans.
  7. Cook until the eggs are just set but still moist, about 2-3 minutes. If adding cheese, sprinkle it over now and let it melt.
  8. Remove from heat and stir in chopped fresh cilantro if using. Taste and adjust seasoning as needed.
  9. Warm your tortillas briefly in a dry skillet or microwave, then spoon the filling onto each tortilla and wrap tightly.

Notes

Do not rush the onions to build flavor. Cook eggs on medium-low heat and stir gently to keep them tender and creamy. Toast spices in oil to release full flavor. Rinse canned beans to reduce sodium and canning flavor. Warm tortillas just before assembling. Optional lime juice squeeze brightens the filling.
