Instructions

  1. Mix dry ingredients: In a mixing bowl, whisk together flour, baking powder, salt, sugar, and cinnamon (if using) for about 2 minutes.
  2. Combine wet ingredients: In a separate bowl, beat the egg, then whisk in milk, melted butter, and vanilla extract for about 3 minutes.
  3. Make the batter: Pour wet ingredients into dry ingredients and stir gently until just combined; lumps are okay. Do not overmix. This takes about 2 minutes.
