Ingredients

Scale
  • ¼ cup (60 ml) extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons (30 ml) lemon juice, freshly squeezed
  • 1 tablespoon (15 g) honey or brown sugar
  • 1 teaspoon (5 g) smoked paprika
  • Chili powder or cayenne (optional)
  • Salt and pepper to taste
  • Chicken breasts or thighs, skin-on
  • Ground beef (80/20 blend)
  • Hot dogs or sausages
  • Firm fish fillets such as salmon or mahi-mahi
  • Vegetables: bell peppers, zucchini, corn on the cob
  • Whole wheat buns or burger buns
  • Cheese slices (cheddar or American)
  • Fresh herbs: cilantro, parsley, or basil
  • Pickles and sliced tomatoes
  • Condiments: ketchup, mustard, mayo, BBQ sauce

Instructions

  1. Prep the Marinade (10 minutes): In a medium bowl, whisk together olive oil, minced garlic, lemon juice, honey, smoked paprika, salt, and pepper.
  2. Marinate the Proteins (20-30 minutes): Place chicken breasts/thighs or fish fillets into a zip-top bag or shallow dish. Pour marinade over them, coat evenly, and refrigerate.
  3. Preheat the Grill (10 minutes): Heat grill to medium-high (about 400°F/200°C). Clean and oil grates with a brush or oiled paper towel.
  4. Prepare the Burgers (15 minutes): Form 4-6 patties from ground beef, season with salt and pepper, and make a small indentation in the center of each patty.
  5. Grill the Proteins (15-20 minutes): Grill chicken 6-8 minutes per side, fish 3-4 minutes per side, and burgers 4-5 minutes per side. Use a meat thermometer to check doneness.
  6. Grill the Veggies and Buns (5-10 minutes): Toss sliced vegetables with olive oil and salt, grill on indirect heat until tender. Toast buns cut-side down until golden.
  7. Assemble and Serve: Layer burgers with cheese, pickles, tomatoes, and condiments. Serve grilled veggies on the side and enjoy immediately.

Notes

Use a meat thermometer to ensure proper doneness. Oil grill grates before cooking to prevent sticking. Let meats rest 5 minutes after grilling. Marinate fish briefly to avoid ‘cooking’ in acid. Thicker burger patties retain juiciness better. Recipes are flexible for dietary substitutions.
