Instructions

  1. Pat the chicken thighs dry with paper towels and place them in the slow cooker in a single layer if possible.
  2. In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil until the honey is mostly dissolved.
  3. Pour the sauce over the chicken in the slow cooker, using a spoon to coat the pieces thoroughly. Turn the chicken to ensure it is covered.
  4. Cover and cook on LOW for 6-7 hours, or on HIGH for 3-4 hours.
  5. About 30 minutes before serving, mix the cornstarch and cold water in a small bowl to create a smooth slurry.
  6. Stir the cornstarch slurry into the liquid in the slow cooker.
  7. Cover and cook on HIGH for the remaining 30 minutes to allow the sauce to bubble and thicken into a glossy glaze.
  8. Turn off the slow cooker, garnish with green onions and sesame seeds, and serve immediately with rice or noodles.
