A quick and easy one-pan meal featuring crispy roasted potatoes and juicy smoked sausage, perfect for busy weeknights or casual dinners.

  • 1 pound smoked sausage, sliced into 1/2-inch rounds (kielbasa or andouille recommended)
  • 1.5 pounds baby potatoes, halved or quartered (Yukon Gold or red potatoes preferred)
  • 2 tablespoons olive oil (extra virgin for richer flavor)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the baby potatoes. Cut them into halves or quarters for even cooking. Place them in a large mixing bowl.
  3. Add the sliced sausage to the bowl. Drizzle olive oil over the potatoes and sausage.
  4. Season with smoked paprika, garlic powder, dried oregano, salt, and pepper. Toss everything together until well coated.
  5. Spread the mixture evenly on a rimmed sheet pan in a single layer.
  6. Place the pan in the oven and roast for 25 minutes. Halfway through (12-15 minutes), flip the sausage and potatoes to encourage even browning.
  7. Check that potatoes are fork-tender and golden brown, and sausage has a caramelized crust. If potatoes are larger, roast an additional 5-10 minutes.
  8. Remove from oven and sprinkle fresh parsley over the top. Serve immediately.

Notes

For extra crispiness, broil the potatoes for the last 2-3 minutes but watch carefully to avoid burning. Tossing the ingredients halfway through cooking is essential for even browning. Use waxy potatoes like Yukon Gold for best texture. Avoid overcrowding the pan to prevent soggy potatoes. Leftovers store well in the fridge for up to 3 days and reheat best in a skillet or oven to maintain crispiness.
