  • 1 teaspoon cornstarch
  • 1 tablespoon unsalted butter, cut into small pieces (14g)
  • ¼ cup old-fashioned rolled oats (25g)
  • ¼ cup all-purpose flour (30g)
  • ¼ cup brown sugar, packed (50g)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons unsalted butter, cold and cut into small cubes (28g)
  • 2 tablespoons chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Place a baking sheet on the middle rack to heat up as the oven warms.
  2. Peel and core your apple, then dice it into ½-inch cubes.
  3. In a medium bowl, combine the diced apple, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apple pieces are evenly coated. Let it sit for a couple of minutes.
  4. In a small bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Using a pastry cutter, two forks, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. If using nuts, stir them in now.
  5. Divide the apple mixture evenly between two 6-ounce ramekins. Dot the top of each ramekin with the small pieces of butter. Sprinkle the crisp topping evenly over the apples, pressing down gently.
  6. Place the ramekins on the preheated baking sheet. Bake for 22-25 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly, loosely tent a piece of foil over the ramekins.
  7. Remove the ramekins from the oven and let them cool on a wire rack for at least 5 minutes. Serve warm, with vanilla ice cream or whipped cream if desired.
