Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • ½ cup (120 ml) plain Greek yogurt
  • 2 tablespoons olive oil
  • Juice of half a lemon (about 1 tablespoon / 15 ml)
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried Italian herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 diced bell pepper (optional)
  • 1 cup (150 g) halved cherry tomatoes (optional)
  • Fresh herbs (parsley, cilantro, or thyme), chopped (optional)
  • Chicken broth or stock, low sodium (optional)
  • Honey or maple syrup (optional)
  • Hot sauce (optional)
  • Grated Parmesan (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Slice horizontally to about 1-inch thickness if thick.
  2. In a medium bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, smoked paprika, Italian herbs, salt, and pepper to make the marinade.
  3. Toss chicken breasts in the marinade until well-coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  4. Preheat oven to 400°F (200°C) for baking or heat a skillet over medium-high heat for stovetop cooking.
  5. For oven: place marinated chicken on a greased baking sheet and bake for 20-25 minutes until internal temperature reaches 165°F (74°C) and edges are golden.
  6. For stovetop: heat 1 tablespoon olive oil in skillet, cook chicken 5-6 minutes per side until browned and cooked through.
  7. While chicken cooks, sauté diced bell pepper and cherry tomatoes in 1 tablespoon olive oil over medium heat for 5 minutes until tender. Season with salt and pepper.
  8. Let chicken rest for 5 minutes after cooking to redistribute juices.
  9. Serve chicken with sautéed veggies or preferred sides. Garnish with chopped fresh herbs.

Notes

Use a meat thermometer to ensure chicken reaches 165°F (74°C) to avoid dryness. Marinate at least 15 minutes for best tenderness. Avoid overcrowding the pan when searing to prevent steaming. Lining baking sheet with parchment paper reduces cleanup and helps even browning. Variations include adding cayenne pepper for heat or swapping Greek yogurt for dairy-free alternatives.
