This Easy Cheeseburger Potato Soup is a cozy, one-pot wonder that tastes just like your favorite cheeseburger in a bowl. With seasoned ground beef, tender potatoes, melted cheddar, and a secret touch of pickle juice, it’s a comforting and crowd-pleasing meal ready in about 40 minutes.

  • 1 lb ground beef (80/20 works best for flavor)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 lbs Russet potatoes, peeled and cubed into ½-inch pieces
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • ½ cup heavy cream
  • 2 cups sharp cheddar cheese, freshly shredded
  • 4 oz cream cheese, softened
  • ½ cup dill pickles, finely chopped, plus 2 tablespoons pickle juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • Salt and black pepper to taste
  • Optional toppings: extra shredded cheddar, chopped pickles, crumbled bacon, diced tomatoes, shredded lettuce

Instructions

  1. Brown the beef: Heat your pot over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until nicely browned, about 6-8 minutes. Leave about a tablespoon of fat in the pot for flavor. Transfer the beef to a plate and set aside.
  2. Sauté the aromatics: Reduce heat to medium. Add the diced onion to the pot and cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Build the base: Pour in the chicken broth and use your spoon to scrape up all the browned bits from the bottom of the pot (deglazing).
  4. Add the potatoes: Stir in the cubed potatoes, Worcestershire sauce, mustard, and ketchup. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15-18 minutes until the potatoes are fork-tender.
  5. Incorporate the dairy: Reduce heat to low. Stir in the milk, heavy cream, and softened cream cheese. Whisk gently until the cream cheese is fully melted and incorporated.
  6. Add the cheese and beef: Gradually stir in the shredded cheddar cheese, a handful at a time, until each batch is melted before adding the next. Return the cooked ground beef to the pot. Stir in the chopped pickles and pickle juice.
  7. Thicken (optional): If you want a thicker soup, use a potato masher to gently mash some of the potatoes right in the pot. Just a few mashes will do—you want some chunks left for texture.
  8. Season and serve: Taste the soup and add salt and pepper as needed. Ladle into bowls and top with your favorite cheeseburger fixings.

Notes

Shred your own cheese for the smoothest melt. Don’t rush the browning step for maximum flavor. If the soup thickens too much upon cooling, stir in a splash of milk or broth when reheating. Start with 2 tablespoons of pickle juice and adjust to taste.
