Instructions

  1. Marinate the chicken thighs: In a mixing bowl, combine 2 tablespoons olive oil, 3 minced garlic cloves, 1 teaspoon smoked paprika, 1 teaspoon salt, and ½ teaspoon freshly ground black pepper. Add 6 bone-in chicken thighs and toss to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for extra flavor. If short on time, marinate for 15 minutes at room temperature.
  2. Prepare the side salad: Chop 2 large ripe tomatoes, slice 1 cucumber thinly, and finely chop a handful of fresh parsley. In a bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon honey, salt, and pepper to taste. Toss the veggies with the dressing and chill in the fridge.
  3. Make the burger patties: In a separate bowl, combine 1 pound ground beef with 1 small diced onion, 1 teaspoon smoked paprika, salt, and pepper. Mix gently but thoroughly to keep patties juicy.
