  • 1 loaf thick-cut bread (brioche or challah preferred, about 12 oz / 340 g, cubed)
  • 1 ½ cups pumpkin puree (not pumpkin pie filling)
  • 4 large eggs, room temperature
  • 1 ½ cups whole milk or half-and-half
  • ⅓ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • Pinch of salt
  • ½ cup chopped pecans, toasted
  • ¼ cup brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Cube thick-cut bread into roughly 1-inch pieces. Spread evenly in a greased 9×13-inch baking dish.
  2. In a large bowl, whisk together pumpkin puree, eggs, milk or half-and-half, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth, about 2-3 minutes.
  3. Pour custard evenly over bread cubes. Gently press bread down to soak custard. Let sit at least 10 minutes or up to overnight in the fridge, covered.
  4. In a small bowl, mix chopped pecans, brown sugar, melted butter, cinnamon, and salt until pecans are well coated.
  5. Preheat oven to 350°F (175°C). Sprinkle praline topping evenly over soaked bread and custard.
  6. Bake uncovered for 45-50 minutes until custard is set and topping is golden and bubbly. Edges should pull slightly away from dish and a knife inserted in center comes out clean.
  7. Let casserole cool for 10-15 minutes before serving.

Notes

Press bread firmly into custard for best soaking. Use day-old bread or toast fresh bread cubes lightly to avoid mushiness. Tent with foil if topping browns too quickly. Assemble the night before and refrigerate for deeper flavor and convenience.
