  • For the coating: 1/4 cup (50g) granulated sugar mixed with 1 teaspoon cinnamon, plus 2 tablespoons melted butter for brushing

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. In a medium bowl, whisk together the dry ingredients: 1 cup all-purpose flour, 1/3 cup granulated sugar, 1 teaspoon baking powder, 1 teaspoon pumpkin pie spice, and 1/4 teaspoon salt.
  3. In a small bowl, combine the wet ingredients: 1/2 cup pumpkin puree, 1 large egg, 3 tablespoons melted unsalted butter, and 1 teaspoon vanilla extract. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Use a spatula to fold everything together gently until just combined. Do not overmix.
  5. Lightly grease your air fryer basket with cooking spray or a brush of oil.
  6. Scoop the batter into small balls using a 1-tablespoon cookie scoop or two spoons. Place in the air fryer basket, leaving about 1 inch of space between each. Cook 6 to 8 per batch.
