This easy 5-ingredient slow cooker chicken tortilla soup is the answer to every tired Tuesday. It’s warm, comforting, and packed with flavor—all from a handful of ingredients you probably already have.

  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 4 cups low-sodium chicken broth
  • 1 (16-ounce) jar of your favorite salsa
  • 1 (15-ounce) can of corn, drained (or 1.5 cups frozen corn)
  • 1 (1-ounce) packet of taco seasoning (optional, but recommended)

Instructions

  1. Place the chicken thighs (or breasts) in the bottom of your slow cooker.
  2. Pour the chicken broth over the chicken. Then, dump in the entire jar of salsa. Sprinkle the taco seasoning packet over the top and give everything a gentle stir to combine.
  3. Stir in the drained corn (or frozen corn).
  4. Cover the slow cooker and cook on LOW for 6-7 hours, or on HIGH for 3-4 hours. The soup is done when the chicken is fork-tender and shreds easily.
  5. Carefully remove the chicken pieces to a cutting board or a large bowl. Use two forks to shred the chicken into bite-sized pieces.
  6. Return the shredded chicken to the slow cooker and stir it into the broth. Taste the soup and adjust the seasoning. You might want a pinch of salt, a squeeze of fresh lime juice, or a dash of cumin.
  7. Ladle the soup into bowls and top with your favorite garnishes.

Notes

If your soup tastes a little thin at the end, let it cook uncovered on HIGH for 15-20 minutes to reduce and thicken slightly. The flavors meld beautifully overnight, so leftovers are even better the next day. For a smoky twist, try a salsa verde or chipotle salsa. If using chicken breasts, check them at the 4-hour mark on LOW to prevent drying out.
