  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup heavy cream (or coconut cream for dairy-free)
  • 2 tablespoons pure maple syrup
  • Sea salt flakes, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Toast chopped pecans on a baking sheet in the oven for about 5 minutes until fragrant and golden. Watch carefully to avoid burning.
  3. In a large bowl, whisk together melted butter, maple syrup, and brown sugar until smooth.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, sift together flour, baking powder, and salt.
  6. Gently fold dry ingredients into wet mixture until just combined. Fold in toasted pecans evenly.
  7. Pour batter into prepared pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. While baking, prepare the butterscotch drizzle: melt butter in a small saucepan over medium heat. Stir in brown sugar and heavy cream. Bring to a gentle boil, then simmer for 2 minutes, stirring constantly.
  10. Remove from heat and stir in maple syrup.
  11. Let the blondies cool in the pan for 15 minutes, then lift out using parchment overhang and transfer to a cooling rack.
