  • 1 cup Red Wine (dry red like Cabernet Sauvignon, Merlot, or Pinot Noir)
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 3 large Carrots, peeled and chopped into 1-inch chunks
  • 1.5 lbs Yukon Gold Potatoes, cut into 1-inch cubes
  • 1 cup Low-sodium Beef Broth
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dried Thyme
  • 2 Bay Leaves
  • Salt and Black Pepper, to taste
  • 2 tablespoons All-purpose Flour (for coating beef)
  • 1 tablespoon Cornstarch mixed with 1 tablespoon cold water (optional, for thickening)

Instructions

  1. Trim the beef chuck roast and cut into 1.5-inch cubes. Place in a large bowl and toss with salt, pepper, and 2 tablespoons of flour until lightly coated.
  2. Chop the onion, carrots, and potatoes into uniform chunks (approx. 1 inch) to ensure even cooking.
  3. Place the chopped onions at the bottom of the slow cooker insert to prevent sticking. Add the floured beef cubes on top, followed by the carrots and potatoes.
  4. Pour the red wine and beef broth over the ingredients. Add tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Stir gently to dissolve the tomato paste.
  5. Cover and cook on Low for 8 hours (or High for 4-5 hours). Avoid opening the lid during cooking.
  6. Check for tenderness. If the gravy is too thin, stir in the cornstarch slurry and cook on High for 15-20 minutes to thicken.
  7. Remove bay leaves, taste for seasoning adjustments, and let rest for 10-15 minutes before serving.

Notes

For a gluten-free version, swap all-purpose flour for cornstarch or a GF blend. Ensure Worcestershire sauce is gluten-free. If you don’t drink alcohol, substitute the wine with beef broth and a teaspoon of balsamic vinegar. Do not skimp on salt as slow cooking can mute flavors. Cut vegetables uniformly to prevent mushiness.
