Ingredients

  • Raw shelled pumpkin seeds (pepitas)
  • Unsalted butter
  • Garlic powder
  • Grated aged parmesan cheese
  • Sea salt
  • Black pepper
  • Optional: Cayenne pepper for heat
  • Optional: Nutritional yeast for vegan version

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Clean raw seeds by swishing in warm water to remove pulp, rinsing until water is clear, and patting completely dry with paper towels.
  3. Spread dried seeds in a single layer on the baking sheet and toast in the oven for 10 minutes to remove residual moisture.
  4. While seeds toast, melt butter in a small bowl and stir in garlic powder, black pepper, and half of the parmesan cheese to form a paste.
  5. Return warm toasted seeds to a mixing bowl and pour the butter mixture over them. Toss thoroughly to coat evenly.
  6. Spread coated seeds back onto the parchment-lined baking sheet and sprinkle remaining parmesan cheese on top.
  7. Bake for another 10-15 minutes, stirring halfway through, until golden brown and nutty smelling.
  8. Remove from oven and let cool completely on the pan to ensure crispiness before serving or storing.

Notes

Ensure seeds are completely dry before roasting to prevent sogginess. Do not crowd the pan; use a single layer for even cooking. Seeds continue to cook slightly after removal from the oven. Store in an airtight container at room temperature for up to one week.
