  • 2 medium delicata squash
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 tablespoon fresh sage leaves, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line two large rimmed baking sheets with parchment paper.
  2. Wash the squash and pat dry. Cut off the stem and blossom ends, then slice crosswise into half-inch thick rounds.
  3. Scrape out large seed clusters with a spoon, leaving small edible seeds. Cut rounds into halves or quarters to create bite-sized chunks.
  4. In a small bowl, whisk together olive oil, honey, garlic powder, salt, and pepper. Stir in chopped sage.
  5. Place squash chunks in a large bowl, pour glaze over, and toss until evenly coated.
  6. Arrange squash in a single layer on baking sheets, ensuring space between pieces to allow for crisping.
  7. Roast for 25-30 minutes, flipping halfway through, until edges are golden brown and interiors are tender.
  8. Drizzle with extra honey if desired, sprinkle with fresh sage or red pepper flakes, and serve immediately.

Notes

Do not overcrowd the pan to ensure the squash roasts rather than steams. Flip halfway through for even browning. The skin is edible and becomes crispy when roasted. If using dried sage, use half the amount of fresh sage.
