Fun and crispy pencil-shaped Rice Krispie treats dipped in a smooth yellow chocolate, perfect for quick celebrations and playful snacks.

  • 6 cups Rice Krispies cereal
  • 4 tablespoons unsalted butter, room temperature
  • 10 ounces mini marshmallows (about 3 cups)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • 8 ounces white chocolate chips or chopped white chocolate
  • Yellow gel food coloring
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or lightly grease it with butter.
  2. In a large saucepan over low heat, melt 4 tablespoons of butter.
  3. Add 10 ounces of mini marshmallows and stir constantly until fully melted and smooth.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt.
  5. Immediately fold in 6 cups of Rice Krispies cereal, mixing until coated.
  6. Transfer mixture into the prepared pan and press down evenly but firmly.
  7. Let cool for about 10 minutes, then lift out the block.
  8. Cut the block into rectangles approximately 1 inch wide and 5 inches long to form pencil shapes.
  9. In a microwave-safe bowl, melt 8 ounces of white chocolate with 1 teaspoon coconut oil in 30-second bursts, stirring until smooth.
  10. Stir in yellow gel food coloring drop by drop until bright yellow.
  11. Dip one end of each Rice Krispie pencil into the yellow chocolate, tap off excess, and place on wax paper to set.
  12. Allow to set fully at room temperature or refrigerate for 10 minutes.
  13. Optional: Add a small dot of melted chocolate or edible marker to mimic a pencil tip.

Notes

Melt marshmallows slowly on low heat to avoid graininess. Butter hands or spatula to prevent sticking when mixing. Use dry utensils when melting chocolate to prevent seizing. Warm knife slightly before cutting for clean edges. Store in airtight container at room temperature up to 3 days or refrigerate up to 1 week.
