These crispy mini bacon-wrapped jalapeño poppers are a perfect party snack combining smoky bacon, spicy jalapeños, and creamy cheese filling for an addictive bite-sized treat.

  • 20 mini jalapeños, halved and seeded
  • 10 slices thick-cut bacon, cut in half
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (about 50 g) shredded sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh chives or green onions, finely chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Wearing gloves, slice each mini jalapeño in half lengthwise and scoop out the seeds and membranes to control heat. Set aside.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth. Stir in chopped chives or green onions.
  4. Fill each jalapeño half with a generous spoonful or piped dollop of the cheese mixture, mounding slightly above the edges.
  5. Wrap each filled jalapeño half with a half slice of bacon, securing with a toothpick if needed.
  6. Arrange poppers on the wire rack or directly on the baking sheet, leaving space between each for even cooking.
  7. Bake in the preheated oven for 20-25 minutes, turning once halfway through if on the baking sheet. Watch closely the last 5 minutes to prevent burning; bacon should be crispy and cheese bubbly.
  8. Let the poppers cool for 5 minutes before serving to allow the cheese to set.

Notes

Wear gloves when handling jalapeños to avoid irritation. Use a wire rack for crispier bacon or flip poppers halfway if not using a rack. Broil 1-2 minutes at the end if bacon isn’t crisping well. Pat jalapeños dry before filling to reduce leaking. For dairy-free, substitute cream cheese and cheddar with plant-based alternatives. For milder heat, remove seeds or use mini sweet peppers.
