  • 8 chicken drumsticks (about 3 pounds / 1.4 kg), skin-on
  • 1 large lemon, zested and juiced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika (smoked paprika optional)
  • 2 tablespoons cornstarch
  • 2 medium sweet potatoes, peeled and cut into fries
  • 1/2 teaspoon ground cumin (optional)
  • 1 tablespoon honey or maple syrup
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken drumsticks dry with paper towels.
  3. In a bowl, combine lemon zest, lemon juice, minced garlic, olive oil, paprika, salt, and pepper. Whisk until well blended.
  4. Lightly coat the drumsticks with cornstarch, tossing gently until evenly dusted.
  5. Place the drumsticks on a wire rack set over a baking sheet. If you don’t have a rack, use a parchment-lined tray but plan to flip halfway.
  6. Brush or spoon the lemon-garlic marinade over the chicken, coating each drumstick well.
  7. Roast chicken for about 35 minutes, flipping halfway through. The skin should be golden and crisp, and the internal temperature should reach 165°F (74°C).
  8. While the chicken cooks, toss the sweet potato fries in a bowl with olive oil, cumin, honey or maple syrup, salt, and pepper.
  9. Spread fries in a single layer on a baking sheet, avoiding overcrowding.
  10. Bake fries for 25-30 minutes, flipping halfway through to ensure even cooking and crisp edges.
  11. Once done, garnish the chicken with fresh parsley and serve immediately alongside the sweet potato fries.

Notes

Pat chicken dry thoroughly for extra crispiness. Don’t skip the cornstarch coating for a crunchy skin. Use a wire rack if possible to allow air circulation. Flip chicken and fries halfway through cooking for even browning. Avoid overcrowding fries to prevent sogginess. Oven temperatures may vary; monitor chicken after 30 minutes to avoid burning.
