These crispy iced apple cider cookies feature a soft, chewy center and a sugary shell, enhanced by a rich brown butter glaze. They are quick to make, using reduced apple cider for intense flavor.

  • 1/2 cup (115g) Unsalted Butter, softened (for dough)
  • 3/4 cup (150g) Light Brown Sugar, packed
  • 1/2 cup (100g) Granulated Sugar
  • 1 large Egg, room temperature
  • 1 teaspoon Vanilla Extract
  • 1 3/4 cups (220g) All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground Ginger
  • 2 tablespoons Unsalted Butter (for glaze)
  • 1 cup (120g) Powdered Sugar, sifted
  • 1–2 tablespoons Milk or Cream
  • Pinch of Salt (for glaze)

Instructions

  1. Pour 1 cup of apple cider into a saucepan and simmer over medium heat until reduced by half (about 1/2 cup). Let cool completely.
  2. In a medium bowl, whisk together flour, baking soda, salt, and ground ginger.
  3. In a large bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  4. Beat in the egg and vanilla extract. Mix in the cooled apple cider reduction until combined.
  5. Gradually fold in the dry ingredients using a rubber spatula until just incorporated.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough onto sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes until edges are lightly golden. Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, melt 2 tablespoons of butter in a small saucepan until golden brown and nutty. Let cool slightly.
  10. Whisk brown butter with powdered sugar, pinch of salt, and 1 tablespoon of milk. Adjust milk for desired consistency.
  11. Drizzle glaze over completely cooled cookies and let set for 10-15 minutes.

Notes

Reduce apple cider to concentrate flavor and remove excess water. Brown butter carefully as it burns easily. Ensure butter is softened, not melted, for proper dough texture. Chill dough if cookies spread too much.
