  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons honey
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 teaspoon apple cider vinegar
  • Pinch of red pepper flakes (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper. Let sit at room temperature for 10 minutes.
  2. Heat a large skillet over medium-high heat and add 1 tablespoon of butter. When melted and foaming, it’s ready.
  3. Place chicken thighs skin-side down in the skillet. Press lightly with tongs to ensure even contact. Cook for 6-8 minutes without moving until edges are golden brown and skin releases easily.
  4. Flip the thighs and cook another 5 minutes skin-side up until mostly cooked through.
  5. Reduce heat to medium-low. Push chicken to one side of the pan. Add remaining 2 tablespoons butter and minced garlic to the empty side. Stir until fragrant, about 30 seconds, being careful not to burn the garlic.
  6. Add honey, soy sauce, and apple cider vinegar. Stir to combine and let the sauce bubble and thicken slightly, about 2 minutes. Add red pepper flakes if using.
  7. Spoon the sauce over the chicken, turning gently to coat both sides. Cook together for another 2-3 minutes until sauce thickens to a sticky glaze.
  8. Remove from heat and let chicken rest in the pan for 5 minutes to redistribute juices and settle the sauce.
  9. Sprinkle chopped fresh parsley over the top if desired. Serve warm straight from the pan.

Pat chicken skin dry to ensure crispiness. Avoid overcrowding the pan to prevent soggy skin. Use medium-high heat for searing and be patient to let the skin brown fully before flipping. If sauce thickens too fast, add a splash of water or chicken broth to loosen it. For gluten-free, substitute soy sauce with tamari or coconut aminos. Optionally finish in a 400°F oven for 10 minutes for even cooking.
