  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes to prevent burning)
  • 4 tablespoons (60g) unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lime juice (about half a lime)
  • Zest of 1 lime (optional)
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley or cilantro, for garnish (optional)

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels to remove excess moisture.
  2. In a small bowl, melt the butter. Stir in minced garlic, lime juice, lime zest, smoked paprika, salt, and pepper. Let the mixture sit for 5 minutes to infuse the garlic flavor.
  3. Thread 4-5 shrimp onto each skewer, piercing through the thickest part so they lay flat for even cooking.
  4. Preheat the grill to medium-high heat (around 400°F / 200°C). Lightly oil the grates to prevent sticking.
  5. Brush the shrimp skewers generously with the garlic butter sauce. Place skewers on the grill and cook for 2-3 minutes per side, brushing with more sauce after flipping. Cook until shrimp are pink, opaque, and have crispy edges (total grilling time 6-8 minutes).
  6. Once off the grill, squeeze fresh lime juice over the skewers and garnish with chopped parsley or cilantro if desired.
  7. Serve immediately while hot for the best crispy, buttery finish.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Do not overcook shrimp to avoid rubbery texture. Brush garlic butter sauce generously multiple times during grilling to keep shrimp juicy and flavorful. If using a grill pan indoors, you can still achieve a nice crisp surface though smoky flavor is best on an outdoor grill. Leftovers can be reheated under a broiler or in a hot pan with butter to restore crispiness.
