Crispy German Bratwurst Skillet with Sauerkraut and Apples

A nostalgic and hearty one-pan dinner featuring seared bratwurst, tangy sauerkraut, and sweet caramelized apples. This quick and easy skillet meal balances savory, sweet, and tart flavors for a comforting weeknight or game day feast.

  • 1 lb pork bratwurst links (fresh or pre-cooked)
  • 1 large yellow onion, diced
  • 2 medium apples (Granny Smith, Honeycrisp, or Fuji), cored and sliced into 1/4-inch wedges
  • 16 oz raw or canned sauerkraut, rinsed and squeezed dry
  • 2 tbsp unsalted butter
  • 1 tsp whole caraway seeds
  • 1 tbsp whole grain or Dijon mustard
  • 1 dried bay leaf
  • 1/4 cup water or apple cider
  • Salt and black pepper to taste

Instructions

  1. Slice bratwurst into thick coins or keep whole. Dice onion and slice apples into thin wedges.
  2. Heat a large skillet (preferably cast iron) over medium-high heat with 1 tbsp butter or oil.
  3. Sear bratwurst for 4-5 minutes per side if fresh, or 2-3 minutes per side if pre-cooked, until deeply browned. Remove and set aside.
  4. Reduce heat to medium. Add remaining 1 tbsp butter to the pan. Sauté onions with a pinch of salt until soft and translucent (about 5 minutes).
  5. Add apple slices and caraway seeds to the skillet. Cook for 3 minutes until apples begin to soften and caraway is fragrant.
  6. Add the drained sauerkraut, bay leaf, and water or apple cider. Stir to combine.
  7. Cover the skillet and simmer on medium-low heat for 10-12 minutes to tenderize the sauerkraut. Uncover and cook 2-3 more minutes if excess liquid remains.
  8. Return bratwurst to the skillet. Stir in mustard and heat through for 1-2 minutes.
  9. Remove bay leaf. Taste and adjust seasoning with black pepper or sugar if needed. Serve immediately.

Notes

Ensure sauerkraut is thoroughly squeezed dry to prevent a watery dish. Do not overcrowd the pan when searing bratwurst to ensure proper browning. If using canned sauerkraut, rinse it well to remove excess brine. For a spicy kick, add diced jalapeño or red pepper flakes.
