Quick and elegant holiday appetizers featuring flaky puff pastry filled with creamy brie cheese and tart cranberry sauce, baked until golden and crisp.

  • 1 sheet puff pastry (about 12 ounces), thawed but cold
  • 8 ounces brie cheese, cut into small cubes or mini rounds
  • 1 cup whole berry cranberry sauce, thick consistency
  • 1 large egg, beaten with 1 tablespoon water
  • Pinch of flaky sea salt (e.g., Maldon)
  • Fresh thyme leaves, optional

Instructions

  1. Preheat oven to 400°F (200°C) and place a rack in the center.
  2. Unroll puff pastry onto a lightly floured surface and cut into 12 equal 3×3 inch squares.
  3. Place one cube of brie in the center of each square, topped with a 1-teaspoon dollop of cranberry sauce.
  4. Fold the four corners of the pastry up towards the center to meet above the filling, pinching edges to seal. Flip so the seam is on the bottom.
  5. Whisk egg and water; brush the top of each bite with the egg wash.
  6. Sprinkle with sea salt and thyme leaves if using.
  7. Place on a parchment-lined baking sheet, leaving an inch between bites.
  8. Bake for 15-18 minutes until puffed and golden brown, watching closely after 12 minutes.
  9. Cool on the pan for 2-3 minutes before serving warm.

Notes

Ensure puff pastry remains cold until baking for best rise. Do not overfill with cranberry sauce to prevent leaking. For extra crispiness, bake an extra 2 minutes but watch closely. Reheat leftovers in an air fryer or toaster oven to restore crunch.
