Instructions

  1. Preheat oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then add the vanilla extract and peppermint extract. Mix until just combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until no streaks of flour remain.
  6. Stir in the chocolate chips and crushed candy canes by hand with a spatula.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden brown but centers look slightly soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Ensure butter is soft but not melted. Spoon flour into measuring cup and level off to avoid dry cookies. Cool baking sheets between batches to prevent spreading. Cookies continue to cook on the hot pan, so remove when centers look slightly soft. Store in an airtight container with a piece of bread to maintain crispness.
