Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rinse black beans thoroughly under cold water, drain well, and pat dry with paper towels to remove excess moisture.
  3. In a mixing bowl, combine softened cream cheese, sour cream, cumin, garlic powder, onion powder, cayenne, salt, and pepper. Blend until smooth.
  4. Fold in the drained black beans, sharp cheddar, and Monterey Jack cheese. Mix gently until evenly distributed.
  5. Spread the mixture evenly into a 9-inch pie dish or small casserole dish.
  6. In a small bowl, mix 1 cup shredded cheddar, 1/2 cup softened cream cheese, and 1/4 cup milk until a thick, pipeable paste forms.
  7. Transfer the cheese mixture to a ziplock bag and seal tight.
  8. Cut a tiny corner off the bag. Pipe concentric circles outward from the center, then pipe radiating lines from the center to the edges to create a spiderweb pattern.
  9. Sprinkle crispy fried onions over the piped cheese lines, pressing gently to adhere.
  10. Bake for 15-20 minutes until cheese is melted and bubbly and edges are golden.
  11. Cool for 5 minutes before serving with tortilla chips.

Ensure black beans are thoroughly dried to prevent a watery dip. Use block cheese and shred it yourself for better melting. The dip can be prepared ahead and refrigerated, adding a few minutes to baking time if cold. Do not freeze as cream cheese may separate.
