Crispy Baked Salmon with Lemon Dill Sauce

A quick and healthy weeknight dinner featuring skin-on salmon fillets baked to a shattering crisp, topped with a tangy, creamy lemon dill sauce. It’s a restaurant-quality meal ready in under 30 minutes.

  • 4 skin-on salmon fillets (6–8 oz each)
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill weed
  • Zest of 1 lemon
  • Salt and black pepper to taste
  • Extra virgin olive oil
  • 1/2 cup plain Greek yogurt
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Pat salmon fillets dry thoroughly with paper towels to ensure crispy skin.
  3. In a small bowl, whisk together mayonnaise, garlic powder, dried dill, and lemon zest to form a paste.
  4. Place salmon fillets skin-side down on the baking sheet. Spread the mayonnaise mixture evenly over the top of each fillet.
  5. Season generously with salt and black pepper, then drizzle lightly with olive oil.
  6. Bake for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.
  7. While salmon bakes, whisk together Greek yogurt, fresh dill, lemon juice, honey, minced garlic, and a pinch of salt to make the sauce.
  8. Remove salmon from oven and let rest for 2-3 minutes.
  9. Serve salmon immediately, drizzled or spooned with the lemon dill sauce.

Notes

Patting the salmon dry is crucial for crispy skin. Do not overcrowd the pan. The salmon continues to cook after removal from the oven, so pull it when it is just barely opaque in the center. Internal temperature should reach 145°F (63°C), though 135°F (57°C) is preferred for moistness.
