  • 2 medium zucchinis, washed and cut into sticks about 34 inches long
  • 1/2 cup panko breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian herbs (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 2 large eggs, beaten
  • Cooking spray or olive oil spray

Instructions

  1. Cut each zucchini into sticks about 1/2 inch thick and 3-4 inches long. Pat them dry with paper towels to remove excess moisture.
  2. In a shallow bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, Italian herbs, salt, and pepper. Stir to mix evenly.
  3. In another bowl, beat the eggs until smooth.
  4. Dip each zucchini stick first into the beaten eggs, letting excess drip off, then roll it in the breadcrumb mixture, pressing lightly to stick. Place coated fries onto a baking sheet or plate.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Place the coated zucchini fries in a single layer inside the air fryer basket. Avoid overcrowding. Lightly spray the fries with cooking spray or olive oil spray.
  7. Air fry for 10-12 minutes, shaking the basket or flipping fries halfway through, until golden brown and crispy on the outside and tender inside.
  8. Serve immediately with your favorite dipping sauce such as ranch, marinara, or garlic aioli. Optionally garnish with fresh herbs.

Notes

Pat zucchini dry to ensure crispiness. Cook fries in a single layer to avoid sogginess. Flip halfway through cooking for even browning. For extra crispiness, spray with oil again and cook 2 more minutes if needed. Can bake in a conventional oven at 425°F for 15-20 minutes with flipping halfway. Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat in air fryer at 350°F for 3-5 minutes.
