A quick and easy street corn recipe made in the air fryer with bold, smoky, creamy, tangy, and spicy flavors and crispy edges in just 15 minutes.

  • 4 ears fresh corn on the cob, husked
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1 teaspoon chili powder (adjust to taste; smoked paprika for milder flavor)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 cup grated cotija cheese (crumbled; feta as substitute)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • Cooking spray or a little oil for air fryer basket

Instructions

  1. Preheat your air fryer to 400°F (200°C) and let it heat for about 5 minutes.
  2. Husk the corn and remove all silk threads. Lightly spray or brush the ears with oil to help them crisp up in the air fryer.
  3. Place the ears in the air fryer basket in a single layer. Cook for 10 minutes, flipping with tongs halfway through. If the corn looks dry, spritz with a little water to keep it juicy.
  4. While the corn cooks, whisk together mayonnaise, sour cream, lime juice, chili powder, cumin, garlic powder, salt, and pepper in a bowl. Taste and adjust seasoning as needed.
  5. Once the corn is done, brush or slather the sauce evenly over each ear while still warm.
  6. Generously crumble cotija cheese over the sauced corn, then top with chopped cilantro for a fresh finish.
  7. Serve immediately while warm and crispy. Optionally, add an extra lime wedge for squeezing on the side.

Preheat the air fryer for best crispiness. Lightly oil the corn to prevent drying out. Flip corn halfway through cooking for even crisping. Mix sauce thoroughly for balanced flavor.
