A quick and easy recipe for perfectly crispy, juicy corn on the cob cooked in an air fryer and coated with flavorful herb butter. Perfect for summer grilling without the grill.

  • 4 ears fresh corn on the cob, husked and cleaned
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons mixed fresh herbs (parsley, chives, thyme), chopped
  • 1 clove garlic, minced (optional)
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Olive oil spray, lightly to coat the corn

Instructions

  1. In a mixing bowl, combine 4 tablespoons softened unsalted butter, 2 tablespoons chopped fresh herbs (parsley, chives, thyme), 1 minced garlic clove, 1 teaspoon smoked paprika, and salt and pepper to taste. Mix until well combined (about 5 minutes).
  2. Husk the corn and remove all silk strands. Rinse each ear under cold water and pat dry with a kitchen towel (5-7 minutes).
  3. Lightly spray or brush each ear with olive oil to help crispiness. Spread a generous layer of the herb butter all over each ear (2-3 minutes).
  4. Place the corn in the air fryer basket in a single layer without crowding. Cook in batches if necessary.
  5. Air fry at 400°F (200°C) for 12-15 minutes, turning each ear halfway through cooking with tongs for even crisping.
  6. Remove the corn and brush with any leftover herb butter. Serve immediately for best texture and flavor.

Notes

If you want extra char, broil the corn for 1-2 minutes after air frying. Soften butter before mixing for easier spreading. Avoid overcrowding the air fryer basket to ensure crispiness. For dairy-free, substitute butter with vegan margarine or coconut oil. Use dried herbs if fresh are unavailable, but reduce quantity to 1 teaspoon.
