A quick and easy air fryer snack made from raw pumpkin seeds, tossed with oil, cinnamon, and sugar for a sweet, crunchy, and nostalgic fall treat.

  • 1 cup raw pumpkin seeds (pepitas), shelled
  • 1 tablespoon neutral oil (avocado, light olive, or coconut)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon sea salt
  • Optional: A few drops of vanilla extract

Instructions

  1. Rinse raw seeds thoroughly to remove pulp and pat them dry with paper towels until damp but not dripping.
  2. Place seeds in a large bowl or zip-top bag and toss with oil until lightly coated.
  3. Sprinkle in cinnamon, sugar, and sea salt (and vanilla if using). Toss until seeds are evenly coated in a sandy powder.
  4. Preheat air fryer to 300°F (150°C).
  5. Spread seeds in a single layer in the air fryer basket. Cook for 5 minutes, shaking the basket halfway through.
  6. Cook for an additional 3-5 minutes, watching closely to prevent burning. Seeds are done when golden brown and making a clicking sound.
  7. Remove from air fryer and spread on a plate or parchment paper to cool completely. They will crisp up as they cool.

Notes

Ensure seeds are dry before cooking to prevent steaming. Cook in a single layer to ensure even crisping. Let seeds cool completely before storing to maintain crunch. Store in an airtight container at room temperature for up to one week.
