A fun and spooky Halloween dinner featuring bell peppers stuffed with seasoned ground beef and cheese, then wrapped in flaky crescent roll dough to resemble mummies. Quick, easy, and delicious for both kids and adults.

  • 4 medium bell peppers (green, red, or orange)
  • 1 can (8 oz) crescent roll dough
  • 1 pound 80/20 ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 cup shredded Mexican blend or cheddar cheese
  • 1/2 cup medium salsa
  • 2–3 strings mozzarella cheese, cut into small pieces (for eyes)
  • Sliced black olives (optional, for eyes)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Wash bell peppers, slice off tops, and scoop out seeds and membranes. Set upright on the baking sheet.
  3. In a skillet over medium-high heat, brown the ground beef. Drain excess fat.
  4. Add diced onion and garlic to the beef; cook until soft (2-3 minutes).
  5. Stir in taco seasoning and salsa; simmer for 2 minutes. Remove from heat and stir in half the cheese. Let cool slightly.
  6. Fill each pepper with the beef mixture and top with remaining cheese.
  7. Unroll crescent dough and cut into 1/2-inch strips. Wrap strips around each pepper, leaving small gaps for cheese to show.
  8. Place mozzarella pieces or olive slices on the dough for eyes.
  9. Bake for 15-20 minutes until dough is golden brown and cooked through.
  10. Cool for 2-3 minutes before serving.

Notes

Ensure the beef filling is cooled slightly before stuffing to prevent the dough from getting soggy. Do not wrap the dough too tightly; leave gaps for the cheese to melt through. For a crunchier crust, brush the dough with melted butter before baking. If using mini bell peppers, reduce baking time to 10-12 minutes.
