  • 4 oz cream cheese, softened to room temperature
  • 2–3 tbsp honey
  • 1 small garlic clove
  • 1 tbsp extra virgin olive oil
  • Fresh thyme or rosemary, chopped (optional)
  • Black pepper to taste

Instructions

  1. Crumble the feta cheese roughly and cut the cream cheese into small cubes. Let both sit at room temperature for 20 minutes.
  2. Add the feta, cream cheese, honey, garlic clove, and olive oil to a food processor.
  3. Pulse a few times to break down the ingredients into a coarse mixture.
  4. Process on high for 2-3 minutes, scraping down the sides with a spatula after 1 minute, until the mixture is smooth, airy, and fluffy.
  5. Taste and adjust seasoning with black pepper and fresh herbs. Add more honey if desired.
  6. Transfer to a serving bowl, drizzle with extra honey and olive oil, and sprinkle with herbs or red pepper flakes.
  7. Serve immediately or chill for 30 minutes to allow flavors to meld.

Ensure all cheese is at room temperature for a smooth, fluffy texture. Avoid pre-crumbled feta as anti-caking agents can make the dip gritty. The dip improves in flavor if made ahead and chilled overnight. If the dip is too thick, add a teaspoon of milk or olive oil. If too thin, add more feta.
