A creamy, cozy, and indulgent vegan French toast made with coconut milk and flax eggs, perfect for a fuss-free breakfast that tastes like you spent hours.

Ingredients

Scale
  • 1 cup (240 ml) full-fat coconut milk
  • 2 tablespoons ground flaxseed
  • 6 tablespoons water
  • 1 tablespoon maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 68 slices sturdy bread (day-old sourdough or whole wheat recommended)
  • 2 tablespoons coconut oil or vegan butter (for frying)

Instructions

  1. Prepare the Flax Eggs: In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water. Stir well and let it sit for 5-10 minutes until it thickens to an egg-like consistency.
  2. Mix the Batter: In a larger bowl, whisk together the coconut milk, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Once well combined, fold in the flax eggs until the batter is smooth and creamy.
  3. Prepare the Bread: Choose sturdy slices of bread — day-old is best because it soaks up the batter without falling apart. If your bread is fresh, lightly toast it to firm it up a bit. Place the batter in a shallow dish for easy dipping.
  4. Dip the Bread: One at a time, dip each bread slice into the batter, letting it soak for about 20-30 seconds on each side. The bread should be saturated but not mushy.
  5. Cook the French Toast: Heat a skillet over medium heat and add 1 tablespoon of coconut oil or vegan butter. Once hot, place the soaked bread slices in the pan. Cook for 3-4 minutes on each side, or until golden brown and slightly crispy on the edges.
  6. Serve: Transfer cooked slices to a plate and keep warm while cooking the remaining bread. Serve immediately with your favorite toppings such as maple syrup, fresh berries, or powdered sugar.

Notes

Use full-fat coconut milk for best creaminess. Let flax eggs rest for 5-10 minutes to thicken. Use day-old or lightly toasted bread to prevent sogginess. Control heat to avoid burning. Cook in batches if needed. For gluten-free, use certified gluten-free bread and spices. Optional additions include nutmeg, cardamom, berries, cocoa powder, or orange zest.
