Creamy Vanilla Bean Overnight Oats with Mixed Berry Compote

A creamy, comforting overnight oats recipe infused with real vanilla bean and topped with a lightly cooked mixed berry compote. Perfect for a quick, healthy breakfast or snack.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice (whole milk preferred, almond or oat milk optional)
  • 1 vanilla bean, split and scraped (or 1 tsp pure vanilla extract as substitute)
  • ½ cup (120g) Greek yogurt
  • 1 tbsp chia seeds (optional but recommended)
  • 12 tbsp maple syrup, to taste
  • 1 cup (150g) mixed berries (fresh or frozen blueberries, raspberries, strawberries, blackberries)
  • 1 tsp lemon juice
  • 2 tbsp water

Instructions

  1. Carefully split the vanilla bean pod lengthwise using a sharp knife. Scrape out the tiny black seeds with the back of the knife. Set both seeds and pod aside.
  2. In a mixing bowl, combine rolled oats, milk, Greek yogurt, chia seeds, and the scraped vanilla bean seeds along with the empty pod. Stir gently to combine all ingredients.
  3. Stir in maple syrup, adjusting sweetness to taste.
  4. Transfer the mixture to a jar or airtight container. Seal and refrigerate overnight or for at least 6 hours.
  5. The next morning, remove the vanilla pod from the oats.
  6. In a small saucepan, add mixed berries, lemon juice, and water. Cook over medium-low heat, stirring occasionally, until berries soften and release juices, about 5-7 minutes. The compote should be slightly thickened but still spoonable. Taste and add more maple syrup if needed.
  7. Spoon the warm mixed berry compote over the creamy vanilla bean overnight oats. Garnish with extra fresh berries or chopped nuts if desired.

Notes

Use a sharp paring knife to split and scrape the vanilla bean pod carefully. Leave the pod in the oats overnight for flavor infusion but remove before serving. Cook berry compote gently over medium-low heat to keep texture. Stir in a splash of milk in the morning if oats are too thick. For dairy-free, substitute Greek yogurt with coconut yogurt and milk with plant-based milk. Maple syrup can be replaced with agave or date syrup for vegan version. The compote can be made ahead and stored up to 3 days.
