  • Salt and freshly ground black pepper (to taste)
  • 1 tablespoon olive oil (for browning)
  • 1 cup heavy cream (240 ml)
  • ½ cup chicken broth (120 ml), low sodium preferred
  • 1 teaspoon garlic powder or 3 cloves fresh garlic, minced
  • 1 teaspoon Italian seasoning (oregano, basil, thyme mix)
  • ½ cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 1 cup fresh baby spinach (about 30 g), loosely packed
  • ½ cup grated Parmesan cheese (about 50 g), freshly grated
  • Optional garnish: fresh basil leaves, torn
  • Optional garnish: red pepper flakes

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. (5 minutes)
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the chicken breasts for about 3 minutes per side until golden brown. (8 minutes)
  3. In a medium bowl, whisk together heavy cream, chicken broth, garlic powder (or minced garlic), Italian seasoning, and chopped sun-dried tomatoes until well combined. (3 minutes)
  4. Place the browned chicken breasts in the slow cooker. Pour the creamy sauce mixture evenly over the chicken. Scatter fresh spinach leaves on top. (2 minutes)
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender and cooked through (internal temp 165°F / 74°C). Avoid opening the lid often.
  6. About 15 minutes before serving, sprinkle grated Parmesan cheese over the chicken, stir gently to combine, and let it melt. (15 minutes)
  7. Taste the sauce and adjust salt or pepper if needed. Garnish with torn fresh basil leaves and a pinch of red pepper flakes. (2 minutes)
  8. If sauce is too thin, transfer to a saucepan and simmer on medium heat for a few minutes, stirring frequently to thicken.

Notes

Browning the chicken before slow cooking adds extra flavor and texture but can be skipped if short on time. Use full-fat heavy cream for best sauce texture. Oil-packed sun-dried tomatoes are preferred; soak dry-packed in warm water before use. Avoid lifting the slow cooker lid frequently to maintain cooking temperature. Add fresh herbs at the end for brightness. Adjust seasoning after cooking. For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
