  • 4 slices sturdy bread (sourdough or country white)
  • 4 slices sharp cheddar cheese (or favorite melting cheese)
  • 2 tablespoons butter, softened

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Place the halved tomatoes, smashed garlic cloves, and chopped onion on the baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss gently to coat evenly.
  3. Roast in the oven for 35 to 40 minutes, stirring once halfway through, until tomatoes caramelize and soften.
  4. Carefully transfer the roasted vegetables to a large soup pot. Pour in the vegetable broth and bring to a gentle simmer over medium heat.
  5. Using an immersion blender, blend the soup until smooth and creamy. If using a regular blender, work in batches and be cautious with hot liquids.
  6. Stir in the heavy cream and torn fresh basil leaves. Simmer for another 5 minutes to meld the flavors. Taste and adjust seasoning with salt, pepper, or a pinch of sugar if needed.
