  • 1 cup milk (dairy or unsweetened almond milk)
  • ½ cup pumpkin puree (100% pure pumpkin)
  • 3 tablespoons maple syrup

  • 1 tablespoon chia seeds (optional)
  • Pinch of salt
  • Greek yogurt (for topping, optional)

Instructions

  1. Combine the dry ingredients. In your jar or container, add 1 cup rolled oats, 1 tablespoon chia seeds (if using), 1 teaspoon pumpkin pie spice, and a pinch of salt. Give it a quick stir with a spoon to distribute the spices evenly.
  2. Mix the wet ingredients. In a small bowl or liquid measuring cup, whisk together 1 cup milk, ½ cup pumpkin puree, 3 tablespoons maple syrup, and 1 teaspoon vanilla extract. Whisk until the pumpkin is fully incorporated and the mixture is smooth and creamy.
  3. Pour and stir. Pour the wet mixture over the dry oats in the jar. Stir thoroughly with a spoon, making sure to scrape the bottom and corners so no dry oats are hiding.
  4. Seal and refrigerate. Put the lid on your jar and place it in the fridge. Let it sit for at least 4 hours, but overnight (8-12 hours) is ideal.
  5. Serve cold or warm. In the morning, take your jar out of the fridge. Give it a good stir. If too thick, stir in a splash of milk. Top with Greek yogurt, chopped pecans, and a dusting of pumpkin pie spice. Eat cold or microwave for 45-60 seconds if preferred warm.

Notes

Use rolled oats, not instant or steel-cut. Don’t skip the salt. Let them sit at least 4 hours, but overnight is best. Add toppings right before eating. Make a big batch on Sunday for the week. These taste even better on day two or three.
