  • 1 large ripe banana (about 120g mashed)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 12 tablespoons (15-30ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • Pinch of salt
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, cinnamon, Greek yogurt

Instructions

  1. Mash the banana thoroughly in a jar or small bowl until smooth.
  2. Add the peanut butter and milk, then whisk or stir vigorously until fully incorporated.
  3. Stir in the maple syrup or honey, chia seeds, and a pinch of salt.
  4. Add the rolled oats and stir until every oat is coated. The mixture should look like thick pancake batter.
  5. Cover and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency.
  7. Add desired toppings and serve cold or at room temperature.

Notes

For best texture, use rolled oats (not instant or steel-cut). Mash the banana well to ensure even sweetness. The chia seeds help create a pudding-like texture. If meal prepping, mix all ingredients in a large bowl first, then divide into jars. Oats keep in the fridge for up to 5 days.
