A rich, silky overnight oatmeal that emulsifies into a pudding-like texture using peanut butter and ripe bananas. This 5-minute prep recipe requires no cooking and delivers a dessert-like breakfast experience.

Ingredients

  • 1 ripe banana
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon honey or maple syrup
  • 1 pinch salt
  • 3/4 cup milk (dairy, almond, oat, or soy)
  • 1 tablespoon chia seeds (optional)
  • 1/2 cup rolled oats (old-fashioned)

Instructions

  1. Peel the banana and place it in a mason jar. Mash thoroughly with a fork until it forms a smooth paste.
  2. Add the peanut butter to the jar. If stiff, microwave for 10 seconds to soften.
  3. Drizzle in the honey or maple syrup and add the pinch of salt.
  4. Pour in the milk and add the chia seeds (if using).
  5. Add the rolled oats to the jar.
  6. Stir vigorously with a spoon or fork, scraping the sides to incorporate all ingredients until the mixture is as smooth as possible.
  7. Seal the jar with a lid and refrigerate for at least 4 hours, preferably overnight.
  8. In the morning, stir well. Add a splash of milk if too thick. Top with extra banana or peanut butter if desired.

Notes

Do not use steel-cut oats as they will not soften enough overnight. Do not use instant oats as they turn to mush. Use ripe bananas with brown spots for maximum sweetness and ease of mashing. The oats will continue to absorb liquid in the fridge, so they may get thicker over time; add a splash of milk before eating if desired. Can be stored in the fridge for up to 5 days.
