A rich, velvety New England clam chowder made with simple pantry staples and canned minced clams. This quick recipe delivers restaurant-quality comfort without the hassle, blending part of the potatoes for a luxurious texture.

  • 1 medium yellow onion, finely diced
  • 2 celery stalks, finely chopped
  • 2 garlic cloves, minced
  • 2 medium Russet potatoes, peeled and diced
  • 2 tablespoons all-purpose flour
  • 2 (6.5 oz) jars minced clams
  • Clam juice from the jars (reserved)
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Peel and dice the potatoes into half-inch cubes. Finely dice the onion and chop the celery. Mince the garlic.
  2. Place a large heavy-bottomed pot over medium heat. Add butter and melt. Add onions and celery with a pinch of salt. Cook for 5 minutes until soft and translucent. Add garlic in the last minute and stir constantly.
  3. Sprinkle flour over the vegetables. Stir constantly for 1-2 minutes to create a roux that looks like wet sand.
  4. Slowly pour in the reserved clam juice and water. Whisk to combine. Add diced potatoes. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 10-12 minutes until potatoes are tender.
  5. Remove pot from heat. Use an immersion blender to blend one-third to one-half of the soup directly in the pot, leaving some chunks for texture. Alternatively, blend 2 cups in a separate blender and return to pot.
  6. Return pot to low heat. Pour in heavy cream and add minced clams with their liquid. Stir gently and heat through for 2-3 minutes. Do not boil vigorously.
  7. Taste and add salt and black pepper as needed. Stir in fresh parsley. Serve immediately.

Notes

Do not overcook the clams as they can become rubbery. Control heat when adding flour to prevent burning. Blend strategically to maintain texture. Taste before adding salt as canned clams vary in saltiness. Avoid boiling the cream to prevent curdling.
