  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams), pounded slightly for even cooking
  • Salt and pepper, to season
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained but keep some oil)
  • 1 cup (240 ml) chicken broth, preferably low sodium
  • 3/4 cup (180 ml) heavy cream (can swap with half & half or whole milk for lighter version)
  • 1/2 cup (50g) freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, and thyme)
  • Pinch of red pepper flakes (optional)
  • A handful fresh basil, roughly chopped for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Once shimmering, add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, keeping pan drippings.
  3. Reduce heat to medium. Add 2 tablespoons butter to the skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant, avoiding burning.
  4. Add chopped sun-dried tomatoes and sauté for 1-2 minutes to release flavor.
  5. Pour in 1 cup chicken broth, scraping up browned bits from the pan. Let simmer for 3-4 minutes to reduce slightly.
  6. Stir in 3/4 cup heavy cream and 1/2 cup grated Parmesan cheese. Whisk gently until sauce is smooth and thickens, about 3-5 minutes. Add Italian seasoning and red pepper flakes if using. Taste and adjust salt and pepper.
  7. Return chicken breasts to the sauce, spoon sauce over them, cover loosely, and simmer on low heat for 5 minutes to meld flavors and keep chicken moist.
  8. Turn off heat and sprinkle fresh chopped basil over the dish. Serve immediately.

Notes

If sauce gets too thick, add a splash of broth or cream to loosen. Pound chicken breasts to even thickness for even cooking and juiciness. Use medium heat to avoid curdling the sauce. Drain but do not rinse sun-dried tomatoes to retain flavor. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
