Creamy Loaded Baked Potato Soup: 10-Minute Easy Dinner

A quick and comforting weeknight dinner featuring a velvety smooth potato soup base with bacon, cheddar, and sour cream toppings. Ready in under 30 minutes using simple pantry staples.

  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 4 ounces full-fat cream cheese, softened
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 6–8 slices bacon, cooked until crispy and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 2–3 stalks green onions, sliced
  • Sour cream for serving

Instructions

  1. Peel and dice potatoes into 1/2-inch cubes. Place in cold water while chopping onions to prevent browning.
  2. In a large pot or Dutch oven, melt butter over medium heat. Add diced onions and a pinch of salt; cook for 5 minutes until soft and translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant. Sprinkle flour over the onions and butter, stirring constantly for 1-2 minutes to create a roux.
  4. Slowly pour in chicken broth while whisking constantly to prevent lumps. Add milk and stir well.
  5. Add drained potatoes, thyme, and black pepper. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes until potatoes are tender.
  6. Mash about half of the potatoes directly in the pot to thicken the soup naturally. Stir in softened cream cheese until melted and incorporated. Taste and add salt as needed.
  7. Ladle hot soup into bowls and top with crumbled bacon, shredded cheddar cheese, sliced green onions, and a dollop of sour cream. Serve immediately.

Notes

For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free flour blend or cornstarch. For dairy-free, use olive oil, plant-based butter, milk, and cream cheese. If the soup thickens too much upon storage, add a splash of milk or broth when reheating. Do not use instant potatoes as they affect texture negatively.
