  • 2 cups plain Greek yogurt (non-fat or low-fat)
  • 2 tablespoons honey (divided)
  • 1/2 cup mixed nuts (almonds, walnuts, or pecans)
  • 1 cup mixed berries (fresh or frozen)
  • 2 tablespoons chia seeds

Instructions

  1. In a large bowl, scoop out the Greek yogurt and add 1 tablespoon of honey per serving (total 2 tablespoons). Stir vigorously until the honey is completely dissolved to create a smooth base.
  2. Toast the nuts in a dry pan over medium heat for about 3 minutes until they smell nutty and look slightly darker. Remove from heat, let cool, and chop roughly.
  3. If using fresh fruit, wash and chop into bite-sized pieces. If using frozen fruit, let it thaw for about 10 minutes and pat dry if there is excess liquid.
  4. In glass jars, start with a layer of the sweetened yogurt at the bottom. Add a layer of chia seeds, followed by a layer of fruit, and top with the toasted nuts. Repeat layers until the jar is full, leaving space at the top for the lid.
  5. Seal the jars tightly and place them in the refrigerator for at least 4 hours, preferably overnight, to allow chia seeds to expand and flavors to meld.
  6. Before eating, give the bowl a good stir. If the mixture is too thick, add a splash of milk or water.

Notes

Chia seeds must soak for at least 4 hours to expand and thicken the yogurt. Do not freeze the finished bowl as the yogurt will separate. For a vegan option, substitute Greek yogurt with high-protein soy or pea protein yogurt. For nut allergies, swap nuts for pumpkin or sunflower seeds.
